Ingredients list for Olive Pickle
- 20 Olives, halved
- 1 teaspoon Mustard seeds
- 1/2 teaspoon Fenugreek leaves (methi)
- 1/4 teaspoon Asafoetida
- 1/2 teaspoon Cumin seeds
- 1 teaspoon Red chilli powder
- to taste Salt
- 3 tablespoons Olive oil
- 1/3 cup Vinegar
Method
- Dry roast half of the mustard seeds, fenugreek seeds, asafoetida, cumin seeds.
- Grind dry roasted ingredients along with red chilli powder to a fine powder.
- Heat oil in a non stick pan. Add remaining mustard seeds.
- Once they splutter, add ground powder, salt and mix well. Sauté for a minute.
- Add vinegar and simmer for fifteen to twenty minutes. Add olives and mix well.
- Allow to cool. Pour in sterilized jar and use as required.
