Ingredients
- 400 grams fresh button mushrooms, quartered
- 2 tablespoons lemon juice
- Salt to taste
- 1 medium tomato seeded, cut into 1 cm pieces
- 1 medium cucumber, cut into 1 cm pieces
- 1/4 cup chopped + 1 sprig fresh mint leavesĀ
- 3 skimmed milk yogurt
- 4-5 cabbage or lettuce leaves
Method
- Take mushrooms in a thick-bottomed vessel along with lemon juice and a little salt. Stew them over low heat for ten minutes. Set aside.
- Combine mushrooms with tomato, cucumber and fresh mint. Mix in skimmed milk yogurt and salt and toss lightly. Serve on a bed of cabbage leaves or lettuce leaves garnished with a sprig of mint leaves.
