Ingredients list for Minted Mushrooms

  • 400 grams Fresh button Mushrooms quartered
  • 2 tablespoons Lemon juice
  • to taste Salt
  • 1 medium Tomato seeded 1 cm pieces
  • 1 medium Cucumber 1 cm pieces
  • 1/4 cup + 1 sprig Fresh mint leaves chopped
  • 3 Skimmed milk yogurt
  • 4-5 Cabbage or lettuce leaves


  1. Take mushrooms in a thick-bottomed vessel along with lemon juice and a little salt. Stew them over low heat for ten minutes. Set aside.
  2. Combine mushrooms with tomato, cucumber and fresh mint. Mix in skimmed milk yogurt and salt and toss lightly. Serve on a bed of cabbage leaves or lettuce leaves garnished with a sprig of mint leaves.
