Minted Mushrooms

Ingredients

  • 400 grams fresh button mushrooms, quartered
  • 2 tablespoons lemon juice
  • Salt to taste
  • 1 medium tomato seeded, cut into 1 cm pieces
  • 1 medium cucumber, cut into 1 cm pieces
  • 1/4 cup chopped + 1 sprig fresh mint leavesĀ 
  • 3 skimmed milk yogurt
  • 4-5 cabbage or lettuce leaves

Method

  1. Take mushrooms in a thick-bottomed vessel along with lemon juice and a little salt. Stew them over low heat for ten minutes. Set aside.
  2. Combine mushrooms with tomato, cucumber and fresh mint. Mix in skimmed milk yogurt and salt and toss lightly. Serve on a bed of cabbage leaves or lettuce leaves garnished with a sprig of mint leaves.
