Marble Bread

  • 20 grams Dry yeast
  • 22 grams Sugar
  • 20 grams Milk powder
  • 5 grams Salt
  • 40 grams Butter
  • for greasing Oil
  • Whole wheat bread -
  • + for dusting Whole wheat flour (atta) 500 grams
  • for greasing Oil
  • 4 teaspoons Fresh yeast
  • 4 teaspoons Sugar
  • + for sprinkling Rolled oats 1 tablespoon
  • 2 teaspoons Salt
  • 4 teaspoons Butter for brushing +
  • Milk for milk wash


  1. Preheat the oven at 180ºC.
  2. To make basic bread loaf, take yeast in a bowl. Add sugar and 1 tablespoon warm water, mix well and set aside for 5 minutes or till bubbles appear.
  3. Take refined flour, milk powder and salt in a planetary mixture.
  4. Add dissolved yeast and mix lightly. Add about 2 cups chilled water and knead well into a soft dough.
  5. Add butter and knead again, dusting flour. Cover with a wet muslin cloth and set aside to ferment for 30 minutes in a warm and dry place.
  6. After 15 minutes, knock back the dough.
  7. To make whole wheat bread, combine yeast and sugar in a bowl. Add 1-2 tablespoons warm water, mix well and set aside for 5 minutes or till bubbles appear.
  8. Combine whole wheat flour, 1 tablespoon oats, yeast mixture,salt and butter in a planetary mixer. Mix, adding 1 cup (250 ml) water, little by little to form a soft dough.
  9. Dust the worktop with some flour, remove the dough on the worktop and knead well by stretching. Divide the dough into equal portions and shape them into small buns, dusting with flour.
  10. Place the dough in another bowl, cover with wet muslin cloth and set aside.
  11. Dust refined flour on a worktop, knock back both the dough separately.
  12. Make a roll of both the dough and twist them together.
  13. Grease a bread loaf tin with oil, place the prepared dough in it. Cover with wet muslin cloth and set aside for 15-20 minutes.
  14. Brush with milk wash.
  15. Put tin in preheated oven and bake for 20-25 minutes.
  16. Remove from heat, cool, slice and serve.
