Mango Coriander Chicken

Ingredients list for Mango Coriander Chicken

  • 1 large Ripe mango peeled and cut into cubes
  • ½ cup Fresh coriander leaves roughly chopped
  • 4 medium Boneless chicken breasts
  • 2 medium Onions roughly chopped
  • 1 inch piece Ginger roughly chopped
  • 5-6 Garlic cloves roughly chopped
  • ½ cup Coconut milk
  • 1 tablespoon Oil
  • 2 teaspoons Lemon juice
  • 2 teaspoons brown sugar/jaggery
  • to taste Salt


  1. Blend together the mango, coriander leaves, onions, ginger, garlic, coconut milk, oil, lemon juice, brown sugar and salt to a thick paste.
  2. Transfer the paste in a bowl and add the chicken breasts. Rub well and set aside to marinate for four to six hours.
  3. Preheat the oven to 180°C.
  4. Heat oil in a non-stick grill pan. Place the chicken breasts and cook till grill marks appear on both the sides.
  5. Place the breasts on a greased baking tray and cover with an aluminium foil. Put the tray in the preheated oven and bake for ten to twelve minutes.
  6. Serve hot.
