Ingredients 

  • 400 grams cottage cheese (paneer), cut into 1½ inch cubes
  • 1½ tablespoons processed cheese, grated
  • 2 tablespoons hung yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon gram flour (besan)
  • ½ tablespoon ginger-green chilli paste
  • Salt to taste
  • 1 teaspoon green cardamom powder
  • 1 tablespoon lemon juice
  • 1 medium green capsicum cut into 1½ inch pieces
  • 1 medium red capsicum cut into 1½ inch pieces
  • 1 medium yellow capsicum cut into 1½ inch pieces
  • Onion rings to serve
  • Lemon wedges to serve
  • Green chutney to serve

Method

  1. Take processed cheese in a bowl, add yogurt, mayonnaise, gram flour, ginger-green chilli paste, salt, cardamom powder and lemon juice and whisk well.
  2. Preheat the oven to 180°C and grease a baking tray.
  3. Add cottage cheese cubes, capsicum, red bell pepper and yellow bell pepper to the prepared mixture. Mix well and let them marinate for 10-15 minutes.
  4. Insert the cottage cheese cubes and coloured capsicum pieces onto skewers in the following order – red capsicum pieces, cottage cheese cube, yellow capsicum piece, cottage cheese cube, green capsicum pieces, cottage cheese cube and red capsicum piece.
  5. Place the skewers in the baking tray and keep the tray in the preheated oven. Bake for 15-20 minutes.
  6. Serve hot with onion rings, lemon wedges and green chutney.
