Ingredients
- 400 grams cottage cheese (paneer), cut into 1½ inch cubes
- 1½ tablespoons processed cheese, grated
- 2 tablespoons hung yogurt
- 1 tablespoon mayonnaise
- 1 tablespoon gram flour (besan)
- ½ tablespoon ginger-green chilli paste
- Salt to taste
- 1 teaspoon green cardamom powder
- 1 tablespoon lemon juice
- 1 medium green capsicum cut into 1½ inch pieces
- 1 medium red capsicum cut into 1½ inch pieces
- 1 medium yellow capsicum cut into 1½ inch pieces
- Onion rings to serve
- Lemon wedges to serve
- Green chutney to serve
Method
- Take processed cheese in a bowl, add yogurt, mayonnaise, gram flour, ginger-green chilli paste, salt, cardamom powder and lemon juice and whisk well.
- Preheat the oven to 180°C and grease a baking tray.
- Add cottage cheese cubes, capsicum, red bell pepper and yellow bell pepper to the prepared mixture. Mix well and let them marinate for 10-15 minutes.
- Insert the cottage cheese cubes and coloured capsicum pieces onto skewers in the following order – red capsicum pieces, cottage cheese cube, yellow capsicum piece, cottage cheese cube, green capsicum pieces, cottage cheese cube and red capsicum piece.
- Place the skewers in the baking tray and keep the tray in the preheated oven. Bake for 15-20 minutes.
- Serve hot with onion rings, lemon wedges and green chutney.
