Cut the bread into one-inch squares and toast in the oven till golden. Heat the olive oil in a non-stick pan; add the garlic cloves and sauté till brown. Mix together all the ingredients for the dressing. Add the browned garlic. Place the roughly torn lettuce, paneer, bread croutons and cherry tomatoes in a large bowl. Pour the dressing over and toss to mix with two forks. Serve immediately.
