Ingredients
- 1 medium Iceberg lettuce, torn
- 2 medium apples, cut into small cubes
- 2 teaspoons chopped celery
- 1 teaspoon crushed black peppercorns
- Cornflakes for garnish
Dressing
- 1 1/2 teaspoons grated lemon zest
- 1/2 cup low-fat yogurt,whisked
- 2 tablespoons roughly chopped fresh basil leaves
- 1/4 medium apple, grated
- Salt to taste
- Black pepper powder to taste
Method
- To make the dressing, put yogurt, fresh basil, apple, salt, black pepper powder and lemon zest in a bowl and mix well. Set aside.
- Mix the lettuce, apple, celery and black peppercorns in another bowl and mix well.
- Refrigerate for at least two hours. Just before serving, add the dressing and toss to mix.Top with cornflakes and serve.
