Lettuce And Apple Salad With Lemon Dressing

A refreshing apple-lettuce salad tossed in a zesty yogurt-basil dressing, topped with crunchy cornflakes. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 medium Iceberg lettuce, torn
  • 2 medium apples, cut into small cubes
  • 2 teaspoons chopped celery 
  • 1 teaspoon crushed black peppercorns
  • Cornflakes for garnish

Dressing

  • 1 1/2 teaspoons grated lemon zest
  • 1/2 cup low-fat yogurt,whisked
  • 2 tablespoons roughly chopped fresh basil leaves 
  • 1/4 medium apple, grated
  • Salt to taste
  • Black pepper powder to taste

Method

  1. To make the dressing, put yogurt, fresh basil, apple, salt, black pepper powder and lemon zest in a bowl and mix well. Set aside.
  2. Mix the lettuce, apple, celery and black peppercorns in another bowl and mix well.
  3. Refrigerate for at least two hours. Just before serving, add the dressing and toss to mix.Top with cornflakes and serve.
