Ingredients
- 1 large bunch spinach (palak), cleaned
- 2 tablespoons finely chopped garlic
- Garlic fried for garnish
- Salt to taste
- 1 tablespoon oil
- 2 tablespoons butter
- 2 green chillies, finely chopped
- 1 medium onion, finely chopped
- 1 teaspoon garam masala powder
- 1/2 teaspoon dried fenugreek leaves (kasuri methi) powder
- 2 tablespoons fresh cream + for drizzling
Method
- Boil sufficient water in a deep non-stick pan, add salt and spinach leaves and blanch for a minute. Drain and refresh in ice cold water.
- Squeeze excess water and put into a blender jar. Add a little water and blend to a fine puree.
- Heat oil and butter in a non-stick pan. Add garlic and sauté till lightly browned.
- Add green chillies and onion, mix and sauté till onions are lightly browned.
- Add spinach puree and mix well. Rinse the blender jar with ½ cup water and add to the pan, mix well and bring the mixture to a boil.
- Add garam masala powder, salt and dried fenugreek leaves powder and mix well. Add cream, mix and cook for a minute.
- Drizzle some cream on top, garnish with fried garlic and serve hot.
