Ingredients
- 100 grams cabbage, shredded
- 1 tablespoon mustard oil
- 2 medium sweet potatoes, cut into 1 inch pieces
- 2 medium white radish , cut into 1 inch pieces
- 100 grams red pumpkin (bhopla/kaddu), 1 inch pieces
- 15 French beans, cut into 1 inch pieces
- 2 brinjals, cut into 1 inch pieces
- 1 large potato, cut into 1 inch pieces
- 15 broad beans (sem ki phalli/papdi), cut into 1 inch pieces
- 1/2 teaspoon panch phoran
- 3 whole dry red chillies
- 1 teaspoon turmeric powder
- 1 teaspoon ginger paste
- 2 green chillies, slit
- Salt to taste
- 3/4 teaspoon sugar
Method
- Heat oil and add paanch phoron and whole red chilies.
- When they change colour, add all the vegetables and stir.
- Add turmeric powder and ginger paste and mix well.
- Cover and cook over low heat till all the vegetables are cooked.
- Increase the heat so that all the moisture is dried up.
- Add salt, sugar and slit green chilies and mix well.
- Cook for two minutes and take the pan off the heat.
Serve hot.
