Labra or ‘bhoger labra’ (offered to the Gods), is a mixed vegetable dish from West Bengal made during puja ceremonies and special occasions. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 100 grams cabbage, shredded
  • 1 tablespoon mustard oil
  • 2 medium sweet potatoes, cut into 1 inch pieces
  • 2 medium white radish , cut into 1 inch pieces
  • 100 grams red pumpkin (bhopla/kaddu), 1 inch pieces
  • 15 French beans, cut into 1 inch pieces
  • 2 brinjals, cut into 1 inch pieces
  • 1 large potato, cut into 1 inch pieces
  • 15 broad beans (sem ki phalli/papdi), cut into 1 inch pieces
  • 1/2 teaspoon panch phoran
  • 3 whole dry red chillies
  • 1 teaspoon turmeric powder
  • 1 teaspoon ginger paste
  • 2 green chillies, slit
  • Salt to taste
  • 3/4 teaspoon sugar

Method

  1. Heat oil and add paanch phoron and whole red chilies.
  2. When they change colour, add all the vegetables and stir.
  3. Add turmeric powder and ginger paste and mix well.
  4. Cover and cook over low heat till all the vegetables are cooked.
  5. Increase the heat so that all the moisture is dried up.
  6. Add salt, sugar and slit green chilies and mix well.
  7. Cook for two minutes and take the pan off the heat.
    Serve hot.
