Ingredients

  • ½ cup garlic (lasun) cloves
  • 14-15 dried red chillies
  • Salt to taste
  • ½ cup yogurt
  • 3 tablespoons ghee
  • ½ teaspoon cumin seeds
  • Fresh coriander sprigs to garnish

Method

  1. Remove the stems of the chillies and put them into a blender jar. Add garlic, salt, ¼ cup yogurt and blend to a fine paste.
  2. For tempering, heat ghee in a non-stick pan and add cumin seeds, and when their colour changes, add the blended paste and the remaining curd. Mix well and saute, on medium heat, for 4-5 minutes till ghee separates. Rinse the blender jar with ¼ cup water and add to the pan and mix well. Cook for 3-4 minutes or till the water is reduced.
  3. Transfer the chutney in a serving bowl, garnish with coriander sprigs and serve.
