Ingredients list for Khajoor Rabri With Sev Paneer Balls
- 500 grams Dates seeded and ground
- 250 grams Paneer (Cottage cheese)
- 4 Dates finely chopped
- 500 millilitres Milk
- 100 grams Sugar
- 3 Walnuts pounded
- 1 teaspoon Ghee
- 5 Cashewnuts chopped
- 5 Almonds chopped
- a pinch Saffron (kesar)
- 1 1/2 teaspoons Milk powder
- 100 grams Powdered sugar
Method
- To make rabdi boil milk in a deep non stick pan, add ground dates and cook, stirring continuously. Add 2 tsps sugar and walnuts and cook, stirring continuously, till the mixture thickens.
- Set aside to cool down to room temperature. To make sev-paneer balls, heat ghee in a non stick pan, add vermicelli and saute till lightly browned.
- Add 1 cup water and cook till vermicelli is just done. Add remaining sugar, cashewnuts and almonds and mix well.Mix paneer, saffron, milk powder, powdered sugar and chopped dates and mix well.
- Divide into equal portions and shape into balls. Stuff each ball with vermicellli mixture. Pour the rabdi into a serving bowl, place the stuffed paneer balls on top and serve.
