Khajoor Biscuit Delight A rich mixture of dried fruits and khoya spread on arrowroot biscuits covered with dark and white chocolate and chilled. This recipe is from FoodFood TV channel By Sanjeev Kapoor 20 Feb 2017 in Recipes Course New Update Main Ingredients Dates, Arrowroot Biscuits Cuisine Fusion Course Desserts Prep Time 21-25 minutes Cook time 21-25 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Khajoor Biscuit Delight 20-25 Dates 12 Arrowroot Biscuits 2 tablespoons Cashewnuts broken 10-12 Almonds 2 tablespoons Pistachios 10-12 Dried figs 1 tablespoon Ghee 1 cup Dark chocolate roughly chopped 1/4 cup Khoya/mawa 1 tablespoon Raisins 1 cup White chocolate roughly chopped Method Grind cashewnuts, almonds and pistachios to a coarse powder. Chop dried figs and dates into small pieces. Heat ghee in a non stick pan, add the ground nuts, figs and dates and sauté for 2-3 minutes. Add 2 cups water and mix well. Melt dark chocolate in a double boiler.Add khoya and raisins to date mixture and mix well. Transfer into a bowl and set aside to cool. Melt white chocolate in a double boiler. Spread date mixture on a biscuit and cover it with another biscuit. Use up all the biscuits and date mixture thus. Prick each sandwich on a fork, and pour dark chocolate over it. Place the biscuit sandwiches in a plate and refrigerate for 10-15 minutes. Turn the biscuits over and pour white chocolate on the other side. Refrigerate again for 10-15 minutes till the chocolate sets. Serve chilled.
