What’s a biryani without some succulent pieces of mutton wrapped in a perfect blend of aromatic spices and herbs!? Yes, though other meats being more common, biryani eaters all over the world can easily swear by mutton. And not just biryanis, curries, bakes and all other preparations with this wonderful meat are always special. Did you know, unlike other dishes, a day-old mutton prep will always be all the more tastier on the palate! Try it the next time you plan on to take on this meat.

Ingredients for Keema Roll Recipe

  • Mutton mince (keema) 250 grams

  • whole wheat flour rotis 4

  • Oil 2 tablespoons

  • Onions finely chopped 2 medium

  • Ginger-garlic paste 1 tablespoon

  • Yogurt 1/4 cup

  • Salt to taste

  • Red chilli powder 1 1/2 teaspoons

  • Onion 1 medium

  • Brown breadcrumbs 1/2 cup

  • Coriander and mint chutney 4 tablespoons

  • Sweet red chilli sauce 4 tablespoons

  • Alfalfa sprouts for garnishing

  • Onion rings for serving

  • Lollo rosso lettuce leaves for serving

Method

Step 1

Heat oil in a non-stick pan, add onions and sauté till lightly browned. Add minced mutton and mix well. Add ginger-garlic paste, yogurt, salt and red chilli powder and mix well. Cover and cook on low heat till mutton is fully cooked.

Step 2

Slice onion.

Step 3

Add breadcrumbs to the mutton and mix well. Switch off the heat.

Step 4

Place each roti on a worktop, spread 1 tbsp coriander and mint chutney and 1 tbsp red chilli sauce on each roti, place some sliced onion in the center and minced mutton mixture over it. Roll the roti. Place 1 roll in aluminum foil and seal the edges to make a wrap.

Step 5

Cut the remaining keema rolls into big pieces and arrange them on one side of a serving plate. Garnish with alfalfa sprouts, place onion rings and lollo rosso lettuce leaves in the center and serve immediately.
