Ingredients list for Jackfruit Payasam - SK khazana
- 1 cup Jackfruit chopped
- 1 1/2 cups Coconut milk
- 2 tablespoons Ghee
- 2 tablespoons Cashewnuts roughly chopped
- 2 tablespoons Fresh coconut sliced
- 1 1/2 tablespoons Raisins
- 3/4 cup Jaggery (gur) chopped
- 1/2 teaspoon Green cardamom powder
Method
- Heat ghee in a non-stick pan, add cashew nuts, coconut slices and raisins, mix and sauté on medium heat till golden brown. Drain them on absorbent paper.
- Add jackfruit to the ghee remaining in the same pan, mix and sauté for 2-3 minutes. Add 1½ cups water, mix, cover and cook till the jackfruit is pulpy.
- Add jaggery and mix, add green cardamom powder and mix well. Cook till jaggery melts and mixture thickens slightly.
- Add coconut milk and mix well. Add ¾ of the sautéed cashew nuts-coconut-raisins and mix well. Cook till the coconut milk gets heated through.
- Transfer into serving bowls, garnish with the remaining cashew nuts-coconut-raisins mixture and serve hot.
