Ingredients list for Hummus Crusted Chicken
- 1 Boneless chicken breast
- 2 cups Chickpeas (kabuli chana) boiled
- to taste Salt
- 1½ teaspoons Crushed black peppercorns
- 1 medium Onion cut into dices
- ½ Green zucchini cut into dices
- ½ Squash cut into dices
- 10-12 Garlic cloves
- Lemon juice of 1½ lemons
- 1½ teaspoons Paprika smoked
- 1 tablespoon Tahina
- for greasing Olive oil ¼ cup +
- 1 Lemon cut into wedges
Method
- Preheat oven at 180°C. Grease a baking tray with olive oil.
- Take chicken breast in a bowl. Add salt and ½ teaspoon crushed peppercorns, mix well and set aside to marinate for 5-10 minutes.
- Combine onion, zucchini and squash in another bowl.
- Roughly chop 4-6 garlic cloves and add in the bowl alongwith juice of ½ lemon. Mix well. Add ½ teaspoon smoked paprika and remaining crushed peppercorns and mix well.
- To make hummus, combine chickpeas, remaining garlic cloves, tahina, remaining crushed peppercorns, salt, remaining lemon juice and ¼ cup olive oil in a blender jar and blend into a smooth paste.
- Add salt to the vegetable mixture and mix well.
- Spread the vegetable mixture on the greased baking tray and place the marinated chicken breast over the vegetable bed. Apply hummus on the chicken, sprinkle remaining smoked paprika, place lemon wedges along and drizzle olive oil on top.
- Put the tray in the preheated oven and bake for 20 minutes or till the chicken is completely cooked.
- Serve hot.
