Ingredients list for Honey Grilled Chicken Sandwiches
- 2 Boneless chicken breasts
- 8 Multigrain bread slice
- 2 teaspoons Honey
- 1 teaspoon Orange zest grated
- to taste Salt
- 1 teaspoon Crushed black peppercorns
- 2 teaspoons Mixed herbs chopped fresh
- 8-10 Garlic cloves finely chopped
- 1 teaspoon Red chilli flakes
- 2 tablespoons Oil
- 1/4 cup Mayonnaise
- as required Butter
Method
- Put chicken breasts in a bowl, add honey, orange zest, salt, crushed peppercorns, herbs, garlic and chilli flakes, mix well and set aside to marinate for half an hour.
- Preheat the oven to 180° C.
- Heat oil in a non-stick grill pan. Place the chicken breasts in it and cook, turning sides, till grill marks appear on both sides.
- Wrap the chicken in aluminium foil and place on a baking tray. Put the tray in the preheated oven and cook for ten to fifteen minutes. Remove from oven, cool and shred.
- Mix the shredded chicken and mayonnaise in bowl. Adjust seasoning.
- Butter four bread slices. Place the chicken filling on each and cover with the remaining bread slices. Apply little butter on the outside of the sandwiches.
- Heat a non-stick sandwich griller. Place the prepared sandwiches in it and grill till crisp.
- Cut into triangles and serve hot.
