Ingredients list for Herb Garlic Prawns
- 12-16 Prawns (medium) deveined and butterfly cut with shells intact
- 8-10 Fresh basil leaves
- 2-3 Fresh parsley sprigs
- 3-4 Fresh thyme sprigs
- 1½ tablespoons Garlic chopped
- Lemon juice of ½ lemon
- to taste Salt
- to taste Crushed black peppercorns
- 1 teaspoon Red chilli flakes
- 1 teaspoon Olive oil 2 tablespoons +
- 1 teaspoon Butter
Method
- Take prawns in a bowl. Add lemon juice, salt and crushed peppercorns and mix well.
- Finely chop basil leaves and parsley and add to the bowl along with garlic, thyme leaves, chilli flakes and 2 tablespoons olive oil and mix well. Set aside to marinate for 1 hour.
- Arrange marinated prawns onto skewers.
- Heat butter and 1 teaspoon olive oil in a non-stick grill pan. Place skewers on it and grill till prawns are fully and evenly cooked.
- Serve hot with your choice of salad.
