Ingredients list for Herb Garlic Prawns

  • 12-16 Prawns (medium) deveined and butterfly cut with shells intact
  • 8-10 Fresh basil leaves
  • 2-3 Fresh parsley sprigs
  • 3-4 Fresh thyme sprigs
  • 1½ tablespoons Garlic chopped
  • Lemon juice of ½ lemon
  • to taste Salt
  • to taste Crushed black peppercorns
  • 1 teaspoon Red chilli flakes
  • 1 teaspoon Olive oil 2 tablespoons +
  • 1 teaspoon Butter

Method

  1. Take prawns in a bowl. Add lemon juice, salt and crushed peppercorns and mix well.
  2. Finely chop basil leaves and parsley and add to the bowl along with garlic, thyme leaves, chilli flakes and 2 tablespoons olive oil and mix well. Set aside to marinate for 1 hour.
  3. Arrange marinated prawns onto skewers.
  4. Heat butter and 1 teaspoon olive oil in a non-stick grill pan. Place skewers on it and grill till prawns are fully and evenly cooked.
  5. Serve hot with your choice of salad.
