Ingredients 

  • 1 medium avocado
  • 4 eggs boiled
  • 1 small tomato, finely chopped
  • 1 small onion, finely chopped
  • 1-2 green chillies, finely chopped
  • 2 teaspoons lemon juice
  • 1 tablespoon fresh coriander leaves, chopped
  • Salt to taste
  • Fresh parsley sprig to garnish

Method

  1. Halve the eggs. Remove the yolks and put them into a bowl, and place the egg white shells on a serving platter.
  2. Halve, seed the avocado and scoop out the flesh and add to the same bowl. Add tomato, onion, green chillies, lemon juice, coriander leaves and salt and mash well with a fork into a smooth paste to make.
  3. Fill guacamole into a piping bag fitted with a star nozzle and pipe into egg white shells.
  4. Serve garnished with parsley sprigs.
