Ingredients
- 1 medium avocado
 - 4 eggs boiled
 - 1 small tomato, finely chopped
 - 1 small onion, finely chopped
 - 1-2 green chillies, finely chopped
 - 2 teaspoons lemon juice
 - 1 tablespoon fresh coriander leaves, chopped
 - Salt to taste
 - Fresh parsley sprig to garnish
 
Method
- Halve the eggs. Remove the yolks and put them into a bowl, and place the egg white shells on a serving platter.
 - Halve, seed the avocado and scoop out the flesh and add to the same bowl. Add tomato, onion, green chillies, lemon juice, coriander leaves and salt and mash well with a fork into a smooth paste to make.
 - Fill guacamole into a piping bag fitted with a star nozzle and pipe into egg white shells.
 - Serve garnished with parsley sprigs.
