Poached Egg and Avocado Burger

Ingredients

  • 4 eggs
  • 1 medium avocado
  • 4 burger buns
  • Salt to taste
  • 1 teaspoon vinegar
  • Juice of 1 lemon
  • Iceberg lettuce leaf as required
  • Mayonnaise as required
  • Black pepper powder to taste
  • Tomato slices for serving 

Method

  1. To poach egg, break egg in an individual silicon mould, add salt and ¼ teaspoon vinegar. Heat sufficient water in a non-stick pan, place the mould in it and let the egg poach.  
  2. Alternately boil sufficient water in a non-stick pan, add vinegar and mix. Break egg in a silicon mould. Sprinkle some salt, add the egg slowly to the pan, cover and let it poach. 
  3. Halve avocado, peel and cut into thin slices. Add lemon juice and salt and set aside. 
  4. Slice burger bun horizontally. Shred lettuce leaf and place on the base half of the bun. Top with mayonnaise and some avocado slices. 
  5. Top with the poached egg, sprinkle pepper powder, remaining avocado slices and sprinkle salt and cover with the top part of the bun. 
  6. Serve immediately with tomato slices.
