Ingredients list for Grilled Lemon Chicken
- 2 Chicken breasts with skin
- 2-3 tablespoons Lemon juice
- 1 Lemon
- 4-5 Fresh rosemary sprigs
- 4-5 Fresh thyme sprigs
- 5-6 Fresh oregano sprigs
- 1 teaspoon Garlic finely chopped
- to taste Black peppercorns crushed
- to taste Salt
- 2 tablespoons Olive oil
- 1 teaspoon Red chilli powder
- for grilling Oil
- for drizzling Extra-virgin olive oil
Method
- Mix rosemary, thyme, oregano, garlic, crushed peppercorns and salt in a bowl. Add 2 tbsps olive oil and crush the mixture with a pestle. Add 2-3 tbsps lemon juice and red chilli powder and mix well.
- Add chicken breasts and rub the mixture thoroughly over them. Set aside to marinate for 4-5 hours.
- Thinly slice 1 lemon. Heat oil in a non-stick grill pan.
- Insert 2 lemon slices under the skin of each marinated chicken breast and place them on the grill pan and grill. Turn over when the underside is lightly browned.
- Place two bricks covered with aluminum foil on the chicken breasts and grill on high heat till the grill marks appear underside. Flip and place the bricks again on the grilled side and grill till the grill marks appear on the other side too.
- Arrange the grilled lemon chicken on a serving plate, garnish with remaining lemon slices, drizzle extra-virgin olive oil them and serve hot.
