Green Apple Salsa on Toast

Ingredients 

  • 1 medium green apple
  • 1 French baguette
  • 4 tablespoons olive oil
  • 1 medium tomato, finely chopped
  • 1 medium onion, finely chopped
  • 2 tablespoons fresh coriander leaves, finely chopped
  • 1 teaspoon green chillies chopped
  • 2 tablespoons lemon juice
  • Salt to taste
  • Crushed black peppercorns to taste
  • A few fresh coriander sprigs to garnish
  • A few black olives sliced to garnish

Method

  1. Preheat the oven to 180° C.
  2. Cut the French baguette into not-too-thin slices.
  3. Grease a baking tray with 1 tbsp oil. Place baguette slices on it and drizzle 2 tbsps olive oil over them. Keep the tray in the preheated oven and bake for 5-7 minutes.
  4. Finely chop the green apple and transfer it in a bowl. Add tomato, onion, coriander leaves, green chillies, lemon juice, salt, crushed black pepper and 1 tbsp oil and mix well.
  5. Place bread slices on a serving platter and keep a spoonful of salsa on top of each.
  6. Garnish each slice with a coriander sprig and an olive slice. Serve immediately.
