Ingredients list for Greek Style Yogurt Chicken
- 2 Chicken breasts
- 1/2 cup Low fat yogurt
- to taste Salt
- 1/2 Lemon
- to taste Black peppercorns , crushed
- 1 1/2 tablespoons Garlic , finely chopped
- 4-5 + to garnish Fresh parsley sprigs
- 7-8 Fresh mint leaves
- 4-5 Fresh coriander sprigs
- 1 teaspoon Olive oil
- 10-12 Black olives , pitted
- to garnish Paprika powder
Method
- Make incisions on the chicken breasts, sprinkle salt and squeeze the juice of lemon over them. Sprinkle crushed black peppercorns and transfer into a bowl, add yogurt and garlic and mix well.
- Finely chop parsley, mint leaves and coriander sprigs, add to the same bowl and mix well.
- Add olive oil and mix well. Set aside for 1 hour to marinate.
- Heat a non-stick grill pan, place the chicken breasts in it and apply excess marinade on top. Cook for 2-3 minutes on high heat.
- Reduce heat and cook for 7-8 minutes, flip and cook the other side till the chicken is evenly and completely cooked on both sides. Take the pan off the heat and transfer chicken into a serving dish.
- Pour ¼ cup water into the grill pan and add black olives and mix well. Take the pan off the heat and transfer the mixture into a serving bowl.
- Garnish chicken with parsley sprig and sprinkle paprika powder. Serve hot with the olives.
