Ingredients list for Greek Style Yogurt Chicken

  • 2 Chicken breasts
  • 1/2 cup Low fat yogurt
  • to taste Salt
  • 1/2 Lemon
  • to taste Black peppercorns , crushed
  • 1 1/2 tablespoons Garlic , finely chopped
  • 4-5 + to garnish Fresh parsley sprigs
  • 7-8 Fresh mint leaves
  • 4-5 Fresh coriander sprigs
  • 1 teaspoon Olive oil
  • 10-12 Black olives , pitted
  • to garnish Paprika powder

Method

  1. Make incisions on the chicken breasts, sprinkle salt and squeeze the juice of lemon over them. Sprinkle crushed black peppercorns and transfer into a bowl, add yogurt and garlic and mix well.
  2. Finely chop parsley, mint leaves and coriander sprigs, add to the same bowl and mix well.
  3. Add olive oil and mix well. Set aside for 1 hour to marinate.
  4. Heat a non-stick grill pan, place the chicken breasts in it and apply excess marinade on top. Cook for 2-3 minutes on high heat.
  5. Reduce heat and cook for 7-8 minutes, flip and cook the other side till the chicken is evenly and completely cooked on both sides. Take the pan off the heat and transfer chicken into a serving dish.
  6. Pour ¼ cup water into the grill pan and add black olives and mix well. Take the pan off the heat and transfer the mixture into a serving bowl.
  7. Garnish chicken with parsley sprig and sprinkle paprika powder. Serve hot with the olives.
