Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Greek Style Yogurt Chicken Recipe

  • Chicken breasts 2

  • Low fat yogurt 1/2 cup

  • Salt to taste

  • Lemon 1/2

  • Black peppercorns , crushed to taste

  • Garlic , finely chopped 1 1/2 tablespoons

  • Fresh parsley sprigs 4-5 + to garnish

  • Fresh mint leaves 7-8

  • Fresh coriander sprigs 4-5

  • Olive oil 1 teaspoon

  • Black olives , pitted 10-12

  • Paprika powder to garnish

Method

Step 1

Make incisions on the chicken breasts, sprinkle salt and squeeze the juice of lemon over them. Sprinkle crushed black peppercorns and transfer into a bowl, add yogurt and garlic and mix well.

Step 2

Finely chop parsley, mint leaves and coriander sprigs, add to the same bowl and mix well.

Step 3

Add olive oil and mix well. Set aside for 1 hour to marinate.

Step 4

Heat a non-stick grill pan, place the chicken breasts in it and apply excess marinade on top. Cook for 2-3 minutes on high heat.

Step 5

Reduce heat and cook for 7-8 minutes, flip and cook the other side till the chicken is evenly and completely cooked on both sides. Take the pan off the heat and transfer chicken into a serving dish.

Step 6

Pour ¼ cup water into the grill pan and add black olives and mix well. Take the pan off the heat and transfer the mixture into a serving bowl.

Step 7

Garnish chicken with parsley sprig and sprinkle paprika powder. Serve hot with the olives.
