Ingredients
- 2 medium bunch spinach, cleaned
- 2 tablespoons oil
- 1/2 teaspoon mustard seeds
- 1 medium onion, finely chopped
- 2 medium tomatoes, finely chopped
- 2 green chillies, chopped
- Salt to taste
- 2-3 tablespoons split pigeon peas (tuvar dal), cooked
- 1/2 cup dal stock
- 3 tablespoons scraped fresh coconut
Method
- Roughly chop spinach leaves.
- Heat oil in a non-stick pan. Add mustard seeds and let them splutter.
- Add onion and saute well. Add tomatoes, mix and saute for 2 minutes.
- Add spinach, green chillies and salt, mix well and cook.
- Add pigeon peas, dal stock, mix well, cover and cook for 3-4 minutes.
- Add coconut and mix well.
- Serve hot.
