Ganthia

Ingredients 

  • 1½ cups gram flour
  • 2½ tablespoons oil + to deep fry 
  • ¼ teaspoon turmeric powder
  • 1 teaspoon carom seeds (ajwain)
  • Salt to taste
  • ½ teaspoon red chilli powder
  • Hot tea to serve

Method

  1. Heat 2½ tablespoons of oil in a non-stick pan on low heat.
  2. Take gram flour in a bowl and add the hot oil, turmeric powder, carom seeds, salt and red chilli powder. Add a little water and mix well. Add 1 tsp oil and combine well to make a semi-soft dough.
  3. Grease oil in a chakli press fitted with a sev attachment. Grease palms with oil. Shape the mixture into a thick, long cylinder and place it inside the chakli press.
  4. Heat sufficient oil in a kadai, press out the mixture directly into hot oil and deep-fry till golden. Drain on absorbent paper. Set aside to cool down.
  5. Break the ganthia into pieces and serve with cups of hot tea.
