Ingredients list for Fried Pumpkin

  • 3 cups Ash Gourd thickly sliced
  • to taste Rice Flour
  • 1/4 teaspoon Baking soda
  • 1/2 cup Rice flour
  • 1/2 cup Gram flour (besan)
  • a pinch Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • 1/2 teaspoon Asafoetida
  • to deep fry Oil

Method

  1. In a bowl, combine sliced ash gourd, salt and baking soda. Mix well and set aside for thirty minutes.
  2. Drain the excess water and allow the slices to dry.
  3. In another bowl, mix rice flour, gram flour, turmeric powder, salt, red chilli powder and asafoetida.
  4. Add sufficient water to make a smooth batter.
  5. Heat sufficient oil in a kadai.
  6. Dip the pumpkin slices in the batter and deep fry till golden brown.
  7. Drain on absorbent paper. Serve hot.
