Ingredients
- 2 eggs
- 8 white bread slices
- Salt to taste
- Crushed black peppercorns to taste
- 2 chicken breasts, boiled and shredded
- ¼ cup mozzarella cheese, grated
- ¼ cup process cheese, grated
- ¼ cup spring onion greens, chopped
- 2 tablespoons mayonnaise
- Butter as required
- Tomato ketchup to serve
- Potato chips to serve
Method
- In a bowl, add chicken, mozzarella cheese, processed cheese, red chilli flakes, crushed black peppercorns, salt, spring onion greens and mayonnaise, mix well.
- In another bowl, break in the eggs, add salt, crushed black peppercorns, whisk well and set aside.
- On a slice of bread, add a portion of the prepared chicken mixture and top it with another slice of bread.
- Heat a little butter on a non-stick tawa and let it melt, meanwhile, dip the prepared sandwiches in the eggs mixture on both sides.
- Place the sandwich on the melted butter and toast on both sides till golden brown. Take it off the heat.
- Cut the sandwiches diagonally and serve hot with tomato ketchup and potato chips.
