One can find plenty of starches, whole grain, fruits, vegetables, fresh fish and seafood in Lebanese cuisine.  Animal fats are rarely used. More of poultry than red meat is eaten.  When red meat is eaten it is usually lamb in the coastal and goat meat in the mountain regions. It also uses ample amounts of garlic and olive oil, often seasoned with lemon juice. Olive oil, herbs, garlic and lemon are typical flavours found in the Lebanese diet.
Foods here are mostly grilled, baked or sautéed in olive oil. Butter or cream is rarely used other than in a few desserts. Vegetables are often eaten raw, pickled or cooked. Herbs and spices are used and the Lebanese are very particular of the freshness of ingredients. Like most Mediterranean countries, much of what the Lebanese eat depends on the seasons. Lebanese recipes are a rich mixture of a variety of ingredients that come from all the Lebanese regions, and each Lebanese area has its own special dishes that bespeak the culture of the area.

Ingredients for Falafel Baked Recipe

  • Cooked Chickpeas cooked (with salt) 1 1/2 cups

  • Broken Wheat soaked in water 1/2 cup

  • Fresh parsley sprigs 4-5

  • Fresh coriander sprigs 4-5

  • Salt to taste

  • Lemon juice 2 teaspoons

  • Soda bicarbonate 1/2 teaspoon

  • Cumin powder 1 teaspoon

  • Crushed black peppercorns to taste

  • Crushed garlic 1 teaspoon

  • Onion finely chopped 1 medium

  • Olive oil for spraying

Method

Step 1

Put cooked chickpeas in a grinder jar. Roughly tear parsley and coriander sprigs and add. Add salt, lemon juice, drained broken wheat, soda bicarbonate, cumin powder and crushed peppercorns and grind to a fine paste. Transfer into a bowl.

Step 2

Add garlic and onion and mix well. Keep the mixture in the refrigerator for ½ an hour.

Step 3

Divide the mixture into equal portions, shape them into balls and flatten to make tikkis.

Step 4

Place aluminum foil in air fryer basket, spray olive oil over it, prick with a knife, place the prepared tikkis, spray some more olive oil over them and fry at 180º C. Remove the basket from air fryer after 5 minutes, flip the tikkis, spray some olive oil and fry for further 5 minutes.

Step 5

Arrange on a serving plate and serve immediately.
