Egg and Cheese Poppers

Egg and Cheese Poppers are bite-sized snacks filled with scrambled eggs, melted cheese, and often herbs. They are coated with breadcrumbs and fried or baked until crispy and golden brown. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 3 eggs boiled, peeled and chopped
  • ½ cup mozzarella cheese, grated
  • ½ cup cheddar cheese, grated
  • 3 tablespoons spring onion greens chopped
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 tablespoon mayonnaise
  • Oil to deep fry
  • 1 cup cheese balls
  • Refined flour slurry as required
  • Tomato ketchup to serve

Method

  1. Take eggs in a bowl, add mozzarella cheese, cheddar cheese, spring onion greens, salt, crushed black pepper and mayonnaise and mix well.
  2. Divide the egg and cheese mixture into equal portions and shape them into balls.
  3. Heat sufficient oil in a deep pan.
  4. Put cheese balls in a plastic bag and crush with a rolling pin. Transfer to a plate.
  5. Take refined flour slurry in a bowl. Dip each egg ball in the flour slurry and coat with crushed cheese balls. Once again, dip the balls in slurry and coat them with crushed cheese balls.
  6. Gently slide the egg balls into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.
  7. Arrange them in a serving bowl and serve hot with ketchup.
