- 3 Eggs
- 3 cups Short grain rice cooked
- 4 tablespoons Oil
- 1/2 cup Spring onion bulbs chopped
- to garnish Spring onion green 1/2 cup chopped+
- to taste Salt
- to taste Crushed black peppercorns
- 1/2 teaspoon Vinegar
- to serve Light soy sauce
Method
- Break eggs into a bowl, add salt and beat well.
- Heat oil in a non-stick pan, pour whisked eggs and scramble lightly.
- Add spring onions, salt, crushed black pepper, cooked rice, vinegar and light soy sauce and toss gently for 2-3 minutes.
- Transfer into a serving bowl and serve hot garnished with the spring onion greens.
