Ingredients list for Double Chocolate Zucchini Bread
- 1/2 cup Cocoa powder
- 1 cup + fo Refined flour (maida)
- 3/4 cup Dark chocolate chips
- ¼ cup + fo Oil
- 1/2 teaspoon Baking soda
- 3/4 teaspoon Baking powder
- 1/4 teaspoon Salt
- 1/2 teaspoon Instant coffee powder
- 2 Eggs
- 1/4 teaspoon Yogurt
- 1/2 cup Castor sugar (caster sugar)
- 1 teaspoon Vanilla essence
Method
- Preheat oven to 180° C. Grease a loaf tin with some oil and dust with some flour.
- Place the zucchini on an absorbent paper so that excess moisture is absorbed.
- Put flour, cocoa powder, baking soda, baking powder, salt, coffee powder and chocolate chips in a bowl and mix.
- Cream together eggs, oil, yogurt, sugar and vanilla essence in another bowl till light and fluffy. Add flour mixture and fold in well.
- Add zucchini and mix till well combined.
- Put the dough in the lined tin, place it in the preheated oven and bake for forty-five to fifty-five minutes. Remove from oven and let it cool.
- Slice and serve.
