Ingredients list for Dimer Jhol-SK Khazana
- 7 Eggs hard boiled and peeled
- 6 Medium potatoes peeled and havled
- to taste Salt
- 3 teaspoons Red chilli powder
- 3/4 teaspoon Turmeric powder
- 3 tablespoons Oil
- 1 tablespoon Ginger-garlic paste
- 2 Green chillies slit
- 1 Large onion finely chopped
- 1 Large tomato finely chopped
- 1 tablespoon Fresh coriander leaves finely chopped
- for garnish Fresh coriander sprig
Method
- Make incisions on eggs and place in a bowl. Add salt, 1 teaspoon chilli powder and ¼ teaspoon turmeric powder, rub well and set aside.
- Put potatoes in another bowl. Add ¼ teaspoon turmeric powder, 1 teaspoon chilli powder and salt, mix well and set aside.
- Heat oil in a non-stick pan. Add eggs and fry till lightly browned. Drain and set aside. .
- Add potatoes to the oil remaining in the pan, mix, cover the pan and fry till lightly browned. Drain and set aside.
- Add ginger-garlic paste to the oil remaining in the pan and sauté well. Add green chillies and onion, mix and sauté till onions are lightly browned.
- Add tomato and salt, mix, well, cover and cook till the tomatoes soften.
- Add remaining turmeric powder and remaining chilli powder and mix well.
- Add ½ cup water, mix, cover and boil for a minute. Add fried eggs and potatoes and mix well.
- Add 1 cup water, mix, cover and cook for 2-3 minutes. Add coriander leaves and mix well.
- Garnish with coriander sprig and serve hot.
