Ingredients for Dimer Jhol-SK Khazana Recipe

  • Eggs hard boiled and peeled 7

  • Medium potatoes peeled and havled 6

  • Salt to taste

  • Red chilli powder 3 teaspoons

  • Turmeric powder 3/4 teaspoon

  • Oil 3 tablespoons

  • Ginger-garlic paste 1 tablespoon

  • Green chillies slit 2

  • Large onion finely chopped 1

  • Large tomato finely chopped 1

  • Fresh coriander leaves finely chopped 1 tablespoon

  • Fresh coriander sprig for garnish

Method

Step 1

Make incisions on eggs and place in a bowl. Add salt, 1 teaspoon chilli powder and ¼ teaspoon turmeric powder, rub well and set aside.

Step 2

Put potatoes in another bowl. Add ¼ teaspoon turmeric powder, 1 teaspoon chilli powder and salt, mix well and set aside.

Step 3

Heat oil in a non-stick pan. Add eggs and fry till lightly browned. Drain and set aside. .

Step 4

Add potatoes to the oil remaining in the pan, mix, cover the pan and fry till lightly browned. Drain and set aside.

Step 5

Add ginger-garlic paste to the oil remaining in the pan and sauté well. Add green chillies and onion, mix and sauté till onions are lightly browned.

Step 6

Add tomato and salt, mix, well, cover and cook till the tomatoes soften.

Step 7

Add remaining turmeric powder and remaining chilli powder and mix well.

Step 8

Add ½ cup water, mix, cover and boil for a minute. Add fried eggs and potatoes and mix well.

Step 9

Add 1 cup water, mix, cover and cook for 2-3 minutes. Add coriander leaves and mix well.

Step 10

Garnish with coriander sprig and serve hot.
