Ingredients list for Dimer Jhol-SK Khazana

  • 7 Eggs hard boiled and peeled
  • 6 Medium potatoes peeled and havled
  • to taste Salt
  • 3 teaspoons Red chilli powder
  • 3/4 teaspoon Turmeric powder
  • 3 tablespoons Oil
  • 1 tablespoon Ginger-garlic paste
  • 2 Green chillies slit
  • 1 Large onion finely chopped
  • 1 Large tomato finely chopped
  • 1 tablespoon Fresh coriander leaves finely chopped
  • for garnish Fresh coriander sprig

Method

  1. Make incisions on eggs and place in a bowl. Add salt, 1 teaspoon chilli powder and ¼ teaspoon turmeric powder, rub well and set aside.
  2. Put potatoes in another bowl. Add ¼ teaspoon turmeric powder, 1 teaspoon chilli powder and salt, mix well and set aside.
  3. Heat oil in a non-stick pan. Add eggs and fry till lightly browned. Drain and set aside. .
  4. Add potatoes to the oil remaining in the pan, mix, cover the pan and fry till lightly browned. Drain and set aside.
  5. Add ginger-garlic paste to the oil remaining in the pan and sauté well. Add green chillies and onion, mix and sauté till onions are lightly browned.
  6. Add tomato and salt, mix, well, cover and cook till the tomatoes soften.
  7. Add remaining turmeric powder and remaining chilli powder and mix well.
  8. Add ½ cup water, mix, cover and boil for a minute. Add fried eggs and potatoes and mix well.
  9. Add 1 cup water, mix, cover and cook for 2-3 minutes. Add coriander leaves and mix well.
  10. Garnish with coriander sprig and serve hot.
