Ingredients list for Date and Walnut Cake - No Egg
- 1 cup Chopped dates
- 3/4 cup Walnuts toasted and chopped
- Refined flour (maida) 2 cups + for dusting
- 1 cup Milk warm
- 1 teaspoon Instant coffee powder
- 1 teaspoon Baking powder
- 1/2 teaspoon Baking soda
- a pinch Salt
- Melted butter 1 cup + for greasing
- 3/4 cup Brown sugar
- 1 teaspoon Vanilla essence
- 3/4 cup Buttermilk
- for dusting Icing sugar
Method
- Preheat oven to 180º C. Grease a cake tin with some butter and dust with some flour.
- Put dates in a bowl, add milk and coffee powder and mix.
- Sift together refined flour, baking powder, baking soda and salt into another bowl and mix well.
- Add butter and brown sugar and mix well. Add vanilla essence and walnuts and mix.
- Add date mixture and mix well. Add buttermilk and mix till well blended into a batter.
- Pour batter into prepared tin, tap a little and place in the preheated oven. Bake for 45 minutes.
- Remove tin from oven and cool cake down to room temperature. Remove cake from tin, dust with icing sugar and serve.
