Ingredients for DATE & WALNUT COOKIES - skk Recipe

  • Dates chopped 1/4 cup

  • Walnuts chopped 1/4 cup

  • White butter 3/4 cup + to grease

  • Sugar 3/4 cup

  • Refined flour 1 cup

  • Baking powder 1/4 teaspoon

  • Baking soda 1/4 teaspoon

  • Eggs 2

  • Milk 50 millilitres

  • Vanilla essence 1 teaspoon

  • Chocolate chips 2 teaspoons

Method

Step 1

Preheat the oven to 180° C

Step 2

Heat butter in a non-stick pan, add sugar and stir till both the butter and sugar melt and combine well.

Step 3

Sieve flour, baking soda and baking powder into a bowl.

Step 4

Transfer the sugar-butter mixture into a large mixing bowl, break in an egg in the bowl and add a 1 tbsp flour mixture, and mix well. Break in the remaining egg and repeat the process.

Step 5

Take walnuts and dates in another bowl, add a little flour mixture and mix.

Step 6

Add the remaining flour mixture to the sugar-butter-egg mixture and mix well. Add the walnuts and dates and mix well.

Step 7

Add milk and mix. Add vanilla essence, mix well to make a smooth lump free batter. Add chocolate chips and mix.

Step 8

Grease a baking dish with butter. Pour the prepared batter in this dish, keep it in the preheated oven and bake for 30-40 minutes.

Step 9

Take it out of the oven and cut into squares. Set aside to cool down to room temperature.

Step 10

Remove the pieces from the baking dish, arrange them on a serving plate and serve.
