Ingredients list for Corn Pancakes
- 3/4 cup Corn kernels boiled
- 2 cups Refined flour
- 1/2 teaspoon Baking powder
- to taste Salt
- 1/2 teaspoon Black pepper powder
- 1 Egg
- 1/2 cup Milk
- to fry Oil
Method
- Sift flour, baking powder, salt and black pepper powder into a bowl.
- Whisk the egg in a mixer and add to the flour and mix well. Heat a non stick frying pan.
- Grind ½ cup corn with milk coarsely and add to the batter and mix. Add the remaining corn kernels and mix well.
- Drizzle a little oil in the pan, drop spoonsful of batter on it, keeping a little distance between each, and cook.
- When the underside is golden, turn them over and cook till both sides are evenly done.
- Serve hot topped with tomato relish or salsa or olives.
