Ingredients list for Corn Ki Kheer

  • 1 1/2 cups Corn kernels boiled
  • 1 litre Milk
  • 1 1/2 tablespoons Sugar
  • 10 Almonds finely chopped
  • 10 Pistachios finely chopped
  • 2 tablespoons Bread crumbs
  • 1/4 teaspoon Green cardamom powder
  • a pinch Saffron (kesar) soaked in one tablespoon warm milk

Method

  1. Heat milk in a deep non-stick pan. Grind the corn coarsely.
  2. Add sugar to the milk. Keeping aside a few pistachios for garnish, add the rest to the milk. Add almonds, white bread crumbs and mix.
  3. Mix green cardamom powder in a little milk and add and mix well. Add corn and mix well.
  4. Add saffron milk and mix. Let the kheer cool down to room temperature. Then keep it in a refrigerator to chill.
  5. Serve chilled decorated with reserved pistachios.
