Ingredients
- ½ cup polenta
- ½ cup processed cheese, grated
- 1 cup refined flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- Salt to taste
- 2 green chillies chopped
- 2-3 chives chopped
- 1 small onion chopped
- 1 tablespoon oil
- ¾ cup milk
- 1 stalk spring onion greens chopped
Method
- Preheat the oven to 180˚C.
- Sieve together refined flour, baking powder, baking soda and salt into a mixing bowl.
- Add polenta, green chillies, chives, onion, processed cheese, oil, milk and spring onion greens and mix well.
- Pour the batter into the muffin moulds, place the moulds in the preheated oven and bake for 15-20 minutes.
- Remove the muffins from the moulds and serve.
