Continental Vegetable

Ingredients

  • 1 medium carrot, boiled and grated
  • 15-20 French Beans, blanched and chopped
  • 1/2 cup American corn kernels, boiled
  • 1/2 cup green capsicum, chopped
  • 3 tablespoons butter
  • 2 medium onions, finely chopped
  • 2 tablespoons refined flour
  • Salt to taste
  • 1 teaspoon black pepper powder
  • 2 medium potatoes, boiled, peeled and chopped
  • 4 bread slices
  • 2-3 green chillies, finely chopped
  • 1 cup grated processed cheese 

Method

  1. Preheat oven to 180°C.
  2. Heat butter in a non stick pan. Add onions and sauté till golden brown. Add refined flour and mix well. Cook for half minute.
  3. Add, carrots, French beans, corn kernels and capsicum and mix.
  4. Add two cups of water and whisk well so that no lumps are formed.
  5. Add salt, pepper, potatoes and mix well. Allow to thicken. Take the pan off the heat and let the mixture cool.
  6. Grind bread slices, green chillies, salt and pepper to a coarse powder.
  7. Transfer half of the vegetable mixture in the baking dish. Sprinkle half of the bread – green chilli mixture followed by half of the cheese evenly.
  8. Repeat this procedure till all the ingredients are used up.
  9. Bake in preheated oven for fifteen to twenty minutes.
  10. Serve hot.
