Ingredients list for Congee
- 1 cup Rice soaked
- 100 grams Boneless chicken boiled and shredded
- 1 cup Chicken stock
- 5-7 Garlic cloves crushed
- 1 inch Ginger sliced
- to taste Salt
- 1 Spring onion with greens
- 4-6 Dried shiitake mushrooms soaked
- 2 tablespoons Sesame oil (til oil)
- 1 inch Ginger cut into thin strips
- 2 tablespoons Light soy sauce
- 1 tablespoon Red chilli sauce
Method
- Heat stock in a non-stick pan, add rice, garlic, ginger and salt.
- Slice spring onion bulb reserving the greens, add to pan, mix and bring to a boil. Cover and cook on medium heat till rice is fully done.
- Roughly chop mushrooms.
Heat 1 tablespoon sesame oil in another non-stick pan, add ginger strips and mushrooms and sauté on high heat. - Add chicken, salt and 1 tablespoon soy sauce and mix. Remove from heat and transfer into a bowl.
- Add remaining soy sauce and remaining sesame oil to rice mixture, mix, cover and cook for 2 minutes. Finely chop spring onion greens.
- Put the rice mixture into a serving bowl and top with some mushroom-chicken mixture, chilli sauce and spring onion greens on top.
Serve hot.
