Ingredients list for Chocolate Cupcakes with Raspberry Frosting
- Cupcakes
- 3/4 cup Dark chocolate melted
- 1/4 cup + tablespoons Cocoa powder
- 3/4 cup + tablespoons Refined flour
- 1/4 cup Butter
- 1 cup Granulated sugar
- 1/2 cup Sour cream
- 1 Egg yolk
- 1 teaspoon Vanilla essence
- 1 Egg
- 3/4 teaspoon Baking powder
- 1/4 teaspoon Salt
- Frosting
- 2-3 tablespoons Raspberry crush
- 1 cup Whipped cream
Method
- Preheat oven at 180° C.
- Take butter and sugar and beat with a hand blender till light. Add sour cream, egg yolk and vanilla essence and beat well. Add egg and beat again. Add melted chocolate and beat well.
- Add flour, cocoa powder, baking powder and salt and beat till the mixture is smooth. Transfer the batter in a piping bag.
- Snip off the end of the piping bag and pipe out the batter into individual cupcake moulds till they ¾ filled. Keep the moulds on a baking tray, keep the tray in the preheated oven and bake for 20-25 minutes. Remove from oven, let them cool completely.
- To make the frosting, take whipped cream in another bowl, add raspberry crush and mix well. Fill the frosting in a piping bag.
- Snip off the end of the piping bag and pipe out the frosting on the cupcakes and serve.
