Ingredients for Chocolate Cupcakes with Raspberry Frosting Recipe

  • Cupcakes

  • Dark chocolate melted 3/4 cup

  • Cocoa powder 1/4 cup + tablespoons

  • Refined flour 3/4 cup + tablespoons

  • Butter 1/4 cup

  • Granulated sugar 1 cup

  • Sour cream 1/2 cup

  • Egg yolk 1

  • Vanilla essence 1 teaspoon

  • Egg 1

  • Baking powder 3/4 teaspoon

  • Salt 1/4 teaspoon

  • Frosting

  • Raspberry crush 2-3 tablespoons

  • Whipped cream 1 cup

Method

Step 1

Preheat oven at 180° C.

Step 2

Take butter and sugar and beat with a hand blender till light. Add sour cream, egg yolk and vanilla essence and beat well. Add egg and beat again. Add melted chocolate and beat well.

Step 3

Add flour, cocoa powder, baking powder and salt and beat till the mixture is smooth. Transfer the batter in a piping bag.

Step 4

Snip off the end of the piping bag and pipe out the batter into individual cupcake moulds till they ¾ filled. Keep the moulds on a baking tray, keep the tray in the preheated oven and bake for 20-25 minutes. Remove from oven, let them cool completely.

Step 5

To make the frosting, take whipped cream in another bowl, add raspberry crush and mix well. Fill the frosting in a piping bag.

Step 6

Snip off the end of the piping bag and pipe out the frosting on the cupcakes and serve.
