Ingredients list for Chinese Style Fish Fingers

  • 2 Basa fish fillets cut into fingers
  • for deep-frying Oil
  • 1 tablespoon Garlic chopped
  • 1-2 Red chillies finely chopped
  • to taste Crushed black peppercorns
  • to taste Salt
  • 1 teaspoon Soy sauce
  • + for drizzling Oyster sauce 2-3 teaspoons
  • 6-8 Basil leaves
  • for coating Bread crumbs
  • 1 Egg
  • for garnish Spring onion greens chopped

Method

  1. Heat sufficient oil in a pan.
  2. Take fish fingers in a bowl. Add garlic, red chilies, crushed peppercorns, salt, soy sauce and oyster sauce and mix. Add torn basil leaves and mix well.
  3. Coat marinated fish fingers with bread crumbs.
  4. Beat an egg in a shallow plate and dip coated fingers and coat again with bread crumbs.
  5. Deep-fry these fingers in hot oil till golden and crisp. Drain on absorbent paper.
  6. Place fried fingers on a serving platter, drizzle some oyster sauce on top and garnish with spring onion greens.
  7. Serve hot.
