Pan-Asian cuisine is a delicious fusion of flavours from all over Asia including Thai, Japanese, Malaysian, Chinese, Vietnamese and Indian dishes. It is not for nothing that these countries are collectively nicknamed the Exotic East. All spices and indigenous ingredients come together in woks and pans to create unique dishes that have no match in any other cuisine.
All Asian countries are endowed with lush natural beauty and rich regional cuisines. The common thread is the use of fresh, readily available ingredients and spices to flavour the food. The dishes can be pungent, sour, sweet and sour or simply flavoured.

Ingredients for Chilli Garlic Momos Recipe

  • Refined flour dough 200 grams

  • Schezwan sauce 1 1/2 tablespoons

  • Garlic paste 1 tablespoon

  • Chicken mince 150 grams

  • Fresh coriander leaves chopped 1 1/2 tablespoons

  • Soy sauce 2 tablespoons

  • Ginger-garlic paste 1 tablespoon

  • Salt to taste

  • White pepper powder to taste

  • Oil 1 tablespoon

  • Spring onion bulbs sliced 3-4

  • Tomato ketchup 3 tablespoons

  • Chicken stock 3 tablespoons

  • Spring onion greens sliced for garnish

Method

Step 1

Mix together chicken mince, 1 tablespoon coriander leaves, 1 tablespoon soy sauce, ginger-garlic paste, salt and pepper powder in a bowl.

Step 2

Roll out dough into a large disc. Using a medium size cookie cutter, cut out discs from it. Place a spoonful of chicken mixture in the centre of each disc and shape into momos.

Step 3

Heat oil in a non-stick pan. Add spring onion bulbs and garlic paste, mix well and sauté till onions turns translucent.

Step 4

Add tomato ketchup and mix well. Add Schezwan sauce and mix. Add remaining soy sauce and chicken stock, mix and bring to a boil.

Step 5

Add salt and pepper powder, mix well and simmer for a minute. Add remaining coriander leaves and mix.

Step 6

Add momos, mix lightly and cook for 3-4 minutes.

Step 7

Garnish with spring onion greens and serve hot.
