Ingredients
- 6 brown bread slices
- Butter for applying
- 1 cheese slice
- ¾ cup grated processed cheese
- 1 small onion, finely chopped
- ½ small green capsicum, finely chopped
- ½ small red capsicum, finely chopped
- ½ small yellow capsicum, finely chopped
- 1 teaspoon freshly chopped coriander leaves
- Salt to taste
- ½ teaspoon dried red chilli flakes
- 1 teaspoon oregano
- Crushed black peppercorns to taste
- Tomato ketchup to serve
Method
- For cheese toast, apply butter on 2 bread slices, place 1 cheese slice and apply butter on top of and place it on a griller and grill till golden brown marks appear. Apply a little butter and grill till crisp.
- For chilli cheese toast, add cheese in a bowl. Add onion, green and red capsicums, yellow capsicum, and chopped coriander.
- Add salt, red chilli flakes, oregano and crushed black peppercorns. Mix well.
- Apply butter on 2 bread slices; Add a portion of the prepared mixture on one. Cover with the other slice of bread.
- Place it on the griller and apply butter on both sides. Grill till golden brown and crisp.
- Meanwhile, to make an open cheese toast, take 2 bread slices and apply some butter on them.
- Top it with the cheese filling, bake in the oven at 180ºC for 10-15 minutes at till the cheese melts and it becomes crisp and golden brown.
- Once the cheese toast is grilled, diagonally cut in half. Serve hot with tomato ketchup.
