Ingredients list for Chicken Crumble
- 2 Boneless chicken breasts
- Oil
- 2 Spring onions with greens
- 1 medium Onion
- 1 tablespoon Garlic
- 1 small Red bell pepper
- 1 small Yellow bell pepper
- 1 small Green capsicum
- 1 Fresh red chilli
- 1 cup Refined flour (maida)
- ¾ cup Butter
- ¼ cup Bread crumbs
- Juice of 1 lemon
- 4 tablespoons Fresh cream
- to taste Salt
Method
- Preheat oven at 180ºC.
- Heat 1 tablespoon oil in a non-stick pan.
- Slice spring onions with greens and add the bulbs to the pan alongwith sliced onion and garlic and sauté well.
- Cut bell peppers and capsicum into cubes and add alongwith red chilli and sauté.
- Cut chicken into medium sized cubes and add. Mix well and cook till chicken is done.
- Mix refined flour, butter and breadcrumbs in a bowl. Knead with the tips of your fingers till the mixture is crumbly in texture. Refrigerate.
- Add lemon juice to the chicken and mix well. Add cream and salt and mix well.
- Put the chicken mixture in a baking dish. Sprinkle spring onion greens.
- Bring the crumble mixture out of the refrigerator. Add salt and mix well. Spread this mixture over the chicken mixture.
- Put the dish in the preheated oven and bake for 15-20 minutes
- Serve hot.
