Ingredients
- 2 chicken breasts, cut into thin strips
- 1 tablespoon oil + for deep-frying
- Salt to taste
- Crushed black peppercorns to taste
- 3-4 tablespoons cornstarch
- 1 egg
- 1 tablespoon chopped garlic
- 1 inch celery, finely chopped
- 2-3 spring onion bulbs, sliced
- 1 cup mixed capsicum strips (green, red and yellow)
- 1 tablespoon red chilli sauce
- 1 teaspoon soy sauce
- 2 tablespoons diagonally sliced spring onion greens + for garnishing
Method
- Heat sufficient oil in a kadai.
- Put chicken strips on a plate. Add salt, crushed peppercorns, egg and cornstarch and mix well.
- Put chicken strips in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
- Heat oil in a non-stick pan. Add garlic and celery and sauté till garlic turns golden brown. Add spring onion bulbs, mixed capsicum strips, red chilli sauce and soy sauce and sauté for 1 minute.
- Add salt, crushed peppercorns and fried chicken strips, mix and cook for 1-2 minutes. Add spring onion greens and mix well.
- Serve hot.
