Ingredients
- ½ cup grated mixed cheese (processed, cheddar and mozzarella)
 - 3 large potatoes, peeled
 - 1 teaspoon dried mixed herbs
 - ½ teaspoon red chilli flakes
 - Salt to taste
 - 1 teaspoon crushed black peppercorns
 - ⅓ cup refined flour
 - 2 teaspoons butter
 - Fresh parsley sprig for garnish
 
Method
- Grate potatoes on a plate and soak in a bowl of ice cold water for 15-20 minutes. Drain the potatoes thoroughly, put them on a kitchen towel and dab excess water.
 - Transfer into another bowl, add mixed herbs, red chilli flakes, salt, crushed black peppercorns and refined flour and mix well. Divide the potato mixture into two portions.
 - Heat a non-stick pan and spread one portion of the potato mixture on it.
 - Sprinkle cheese evenly on top and spread the remaining potato mixture over the cheese.
 - Add butter and let it cook until crisp and golden in colour. Turn and cook similarly on the other side as well.
 - Turn it out onto a serving dish, garnish it with parsley sprig and serve hot.
