Ingredients list for Cheesy Jacket Potatoes
- as required Processed cheese
- 4 medium Potatoes medium
- 3 tablespoons Butter
- 2-3 Spring onion bulbs chopped
- 1/2 cup Corn kernels
- to taste Crushed black peppercorns
- to taste Salt
- 2 tablespoons Refined flour (maida)
- 1 cup Milk
- for garnishing Spring onion greens Chopped
Method
- Preheat oven at 180ºC.
- Halve the potatoes. Scoop out the flesh and reserve alongwith the shells.
- Heat 1 tablespoon butter in a non-stick pan. Add spring onion bulbs and corn kernels and mix well. Add crushed peppercorns and salt, mix and cook for a minute.
- Add the reserved potato flesh and crushed peppercorns and mix well. Remove from heat.
- To prepare white sauce, heat remaining butter in a non-stick pan. Add flour, mix and cook for a minute. Switch off the heat, add milk and mix well. Turn on the heat and sauté for 5-7 minutes. Add crushed peppercorns and salt, mix and cook for a minute. Switch off heat and set aside.
- Add the prepared white sauce to the prepared potato mixture and mix well.
- Place the potato shells on a baking tray.Fill each with the prepared potato-white sauce mixture. Grate some cheese over each potato jacket.
- Put the baking tray in preheated oven and bake for 10-14 minutes.
- Serve hot garnished with spring onion greens.
