Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Cauliflower Bread with Flax seed Recipe

  • Cauliflower , grated 1 medium

  • Flax seeds , ground 1 tablespoon

  • Desiccared coconut 3 tablespoons

  • Almond flour 2 tablespoon

  • Eggs 2

  • Paprika powder 1/2 tablespoon

  • Garlic powder 1 tablespoon

  • Salt 1 teaspoon

  • Black peppercorns , crushed 1/2 teaspoon

  • Baking powder 1/2 teaspoon

Method

Step 1

Preheat oven to 200° C.

Step 2

Squeeze out water from cauliflower, put it into a pan and steam for 5 minutes.

Step 3

Break the eggs into a bowl and whisk till light in colour. Add cauliflower, desiccated coconut, almond flour, flax seeds, paprika powder, garlic powder, salt, crushed peppercorns and baking powder And mix well to form a dough.

Step 4

Place the dough in a loaf tin and level it out. Place the tin in the preheated oven and bake for 45 minutes.

Step 5

Bring the tin out of the oven and let it cool. Demould, cut into slices and serve.
