Ingredients list for Caribbean Rice
- 2 cups Rice soaked
- 1 cup Coconut scraped
- 1/3 cup Orange juice
- 1/4 cup Fresh coriander leaves finely chopped
- 3 tablespoons Butter
- 1 teaspoon Cumin seeds
- 2-3 Bay leaves
- 2-3 Green chillies slit
- 1 inch piece Ginger chopped
- to taste Salt
- 1 Orange peeled and segments separated
Method
- Boil four cups of water in a deep pan. Add the soaked rice and cook till three fourth done. Drain the water and allow the rice to cool.
- In a bowl mix the cooked rice with orange juice, coconut and coriander leaves. Heat butter in a kadai and add cumin seeds.
- When they begin to change colour, add bay leaves, green chillies and ginger and sauté for a minute. Add rice and salt and sauté for three-four minutes. Serve hot garnished with orange segments.
