By Sanjeev Kapoor 07 Mar 2019 in Recipes Course New Update Main Ingredients Rice, Coconut Cuisine American Course Rice Prep Time 16-20 minutes Cook time 16-20 minutes Serve 4 Taste Tangy Level of Cooking Moderate Others Veg Ingredients list for Caribbean Rice 2 cups Rice soaked 1 cup Coconut scraped 1/3 cup Orange juice 1/4 cup Fresh coriander leaves finely chopped 3 tablespoons Butter 1 teaspoon Cumin seeds 2-3 Bay leaves 2-3 Green chillies slit 1 inch piece Ginger chopped to taste Salt 1 Orange peeled and segments separated Method Boil four cups of water in a deep pan. Add the soaked rice and cook till three fourth done. Drain the water and allow the rice to cool. In a bowl mix the cooked rice with orange juice, coconut and coriander leaves. Heat butter in a kadai and add cumin seeds. When they begin to change colour, add bay leaves, green chillies and ginger and sauté for a minute. Add rice and salt and sauté for three-four minutes. Serve hot garnished with orange segments.
