Ingredients list for Caribbean Rice

  • 2 cups Rice soaked
  • 1 cup Coconut scraped
  • 1/3 cup Orange juice
  • 1/4 cup Fresh coriander leaves finely chopped
  • 3 tablespoons Butter
  • 1 teaspoon Cumin seeds
  • 2-3 Bay leaves
  • 2-3 Green chillies slit
  • 1 inch piece Ginger chopped
  • to taste Salt
  • 1 Orange peeled and segments separated


  1. Boil four cups of water in a deep pan. Add the soaked rice and cook till three fourth done. Drain the water and allow the rice to cool.
  2. In a bowl mix the cooked rice with orange juice, coconut and coriander leaves. Heat butter in a kadai and add cumin seeds.
  3. When they begin to change colour, add bay leaves, green chillies and ginger and sauté for a minute. Add rice and salt and sauté for three-four minutes. Serve hot garnished with orange segments.
