Ingredients list for Caramalized Onion and Fig Open Sandwich

  • 1 large Onion sliced
  • 3-4 Figs sliced
  • 2 Bread slices sour dough
  • 1 tablespoon Oil
  • 1 tablespoon Sugar powdered
  • ¾ cup Ricotta cheese
  • 2-3 Black olives pitted, finely chopped
  • 2-3 Green olives pitted, finely chopped
  • 1 teaspoon Capers finely chopped
  • 1 teaspoon Pickled onions finely chopped
  • to taste Salt
  • to taste Crushed black peppercorns
  • 1-2 Thyme sprigs
  • 1 teaspoon Balsamic vinegar
  • as required Arugula leaves
  • as required Alfalfa

Method

  1. Heat oil in a non-stick pan. Add onion and powdered sugar and sauté till it caramelizes.
  2. Take ricotta cheese in a bowl. Add black olives, green olives, capers, pickled onions, salt, crushed peppercorns and mix well.
  3. Add torn thyme sprigs to caramelized onion and sauté for 30 seconds. Add balsamic vinegar, mix and cook for 1-2 minutes.
  4. Spread some ricotta cheese mixture on each bread slice. Put some arugula leaves, caramelized onion mixture and fig slices on top.
  5. Sprinkle some salt and crushed peppercorns on top. Put some alfalfa on top.
  6. Serve immediately.
