Cajun Prawn Wrap

Ingredients
- 4 large whole wheat rotis
- 200 grams small prawns, peeled and deveined
- 1½ teaspoons Cajun spice
- 1 tablespoon oil
- 1 tablespoon chopped garlic
- 3-4 spring onion bulbs, sliced
- Salt to taste
- Crushed black peppercorns to taste
- Mayonnaise for spreading
- ¼ medium purple cabbage, shredded
- 1 medium carrot, peeled and cut into thin strips
- 1 medium cucumber, peeled, deseeded and sliced
- Tomato ketchup for serving
Method
- Heat oil in a non-stick pan. Add garlic and spring onion bulbs and sauté for 1 minute.
- Add prawns, mix and cook for 1 minute. Add salt, crushed peppercorns and Cajun spice, mix and cook till prawns are done. Transfer on a plate.
- Warm the rotis on a non-stick tawa and transfer on a plate.
- Spread some mayonnaise on each roti. Put some shredded purple cabbage, carrot strips, cucumber slices and cooked prawns mixture in the center and roll.
- Serve with tomato ketchup.
